Ingredients
2 tablespoons (divided) from Olives & Grapes Basil flavored olive oil?
1 lb 93% lean ground turkey
1 clove garlic, minced
1/4 medium onion, minced
1 tbsp chopped basil leaves
6 large tomatoes, washed
2 teaspoons salt
1 teaspoon ground pepper
1 cup of low-sodium chicken broth
Directions
- Mix one tablespoon of Basil olive oil, garlic, onion, basil, salt and pepper into the ground turkey.
- Slice the top of the tomatoes and use a spoon to scoop out the tomato pulp.
- Spoon 1 spoonful of meat mixture into each tomato.
- Place stuffed tomatoes onto a small baking pan, pour the chicken broth on the bottom of the pan. Cover with aluminum foil. Bake for about 20 minutes or until the tomatoes are tender.
- Carefully remove the foil. Drizzle more Basil flavored olive oil on top of tomatoes. Serve hot with rice, pasta, or salad.
