Strawberry Salad

Ingredients

5 ounces arugula

1 lb strawberries, leave three whole strawberries on the side. Thinly slice the rest.

4 ounces crumbled goat cheese or feta, or 1 ripe avocado, diced

1 tablespoon from Olives & Grapes Strawberry Kiwi Rose white balsamic vinegar

1 tablespoon from Olives & Grapes Persian Lime infused Olive Oil

1 cup non-fat Greek yogurt

Pinch of fine sea salt to taste

Ground black pepper, to taste

Optional

½ cup roasted and salted sunflower seeds

Directions

Balsamic vinaigrette:

In a small blender, combine 3 whole strawberries, white balsamic, olive oil, and yogurt, then blend them.

Taste, and add more salt or pepper if needed.

To assemble the salad:

Layer the arugula, sliced strawberries, cheese, and nuts on a large serving platter or bowl.

When you’re ready to serve the salad, drizzle the vinaigrette over it and toss to combine.

Serve promptly.
