New Year’s Resolution Salad

Ingredients

1 cup of shredded carrots

Leafy salad greens, about two hands full

1 small apple or pear, dice or slice

3 fresh strawberries, sliced

1 cup of chopped boiled or roasted chicken breast

1/4 cup roasted walnut

1/4 cup from Olives & Grapes 100% pure Roasted California Walnut oil

1/2 cup from Olives & Grapes Cascadian Wild Raspberry or Cranberry Pear white balsamic vinegar

1 small lime

Salt to taste

Directions

Chicken: Chop 1 cup of cooked chicken breasts. To save time, you can also use rotisserie chicken.

Dressing: Combine walnut oil with white balsamic vinegar, lemon juice, and a pinch of salt to taste. Mix well.

Combine all together in the salad bowl, drizzle the salad dressing on the top. Mix them well.

Serve immediately.
