Dark Chocolate Balsamic Truffles

Ingredients

8 -1/2 ounces dark chocolate, chopped

1/4 cup heavy cream

2 teaspoon from Olives & Grapes Dark Chocolate balsamic vinegar

1 1/2 cup cocoa powder

Directions

Melt the chocolate and cream in a double boiler over hot, but not simmering water. Place melted chocolate in a small bowl. Stir in the balsamic vinegar.

Use the silicon spatula to mix the chocolate until firm but moldable.

Use a melon baller or teaspoon to scoop out the chocolate.

Leave the truffles at room temperature for about 10 minutes.

Dip each truffle into the bowl of cocoa powder, rolling it around to coat it evenly. Dust off any excess powder before placing the ball in your container of choice. Repeat this procedure until you’ve used up all the truffles.

Store the truffles inside the refrigerator until ready to serve.

Options: You could also use Raspberry, Black Cherry, and Espresso dark balsamic.
