St. Paddy’s Day Cookies

Ingredients:

1 box white cake mix

2 large eggs

1/2 cup of from Olives & Grapes Fused Whole Fruit Lemon olive oil

10 drops green food coloring

1 cup powdered sugar

1 tsp cornstarch

Optional

1 tablespoon green sprinkles

1 tsp mint flavoring

Instructions:

Preheat oven to 375°F and line a baking sheet with parchment paper.

In a large bowl, mix the cake mix, eggs, fused lemon olive oil, mint flavoring, green sprinkles(if using), and green food coloring until well combined.

In a separate small bowl, mix the powdered sugar and cornstarch.

Roll the dough into balls, then coat each ball in the powdered sugar mixture.

Place on the prepared baking sheet and bake for 8 minutes.

Let the cookies cool for 1 minute before transferring them to a cooling rack.

Makes roughly 2 dozen cookies. Store covered in an air-tight container.
