Ingredients
4 cups chopped peeled sweet potato
3 tablespoons from Olives & Grapes All Natural Butter Flavored olive oil
2 tablespoons or more from Olives & Grapes Cinnamon Pear and from Olives & Grapes Red Apple balsamic vinegar to taste.
1 pinch salt
Directions
Preheat the oven to 425 degrees F (220 degrees C)
Blend 1 tablespoon of all-natural butter-flavored olive oil with 2 tablespoons of balsamic mix. Set aside.
Drizzle about 2 tablespoons of butter olive oil over the sweet potatoes, tossing to coat and pour into a shallow roasting pan.
Roast sweet potatoes in the oven, turning frequently, until soft and golden brown, about 30 to 35 minutes.
Remove from the oven. Drizzle with the olive oil and balsamic blend, season with salt.
Carefully put the tray back in the oven for 5 more minutes
*Option: After taking the tray out of the oven, sprinkle about 1 teaspoon of cinnamon powder.
